- 500g pieces of pumpkin
- 1 sweet potato in pieces
- 2 onions roughly chopped
- 1l chicken stock
- 200ml coconut milk
- 2 finely chopped cloves of garlic
- 1 tbsp paprika powder
- 1 tbsp turmeric
- olive oil, pepper & salt
- meatballs & spaghetti strands
Heat the olive oil in a soup pot. Fry the onions until golden. Add the pumpkin pieces, sweet potato pieces, garlic and all the spices. Fry on high heat for 5 minutes.
Pour over the chicken stock and let it boil. Turn down the heat until the stock is simmering gently and allow to cook for 30 minutes. Add the coconut milk and mix with the blender. Season to taste with salt and pepper.
For each meatball, put 4 strands of uncooked spaghetti through it. Boil some water with a pinch of salt and let the meatballs with spaghetti cook. Now you can see the spiders swimming!
